Sourdough Popovers

We already knew that popovers were delicious, but who knew you could make delicious sourdough popovers quickly and without special equipment?! 

Sourdough Popovers Recipe (Sourdough Surprises)


Basic Sourdough Popovers Recipe (King Arthur Flour)

1 cup milk
3 eggs
1/2 cup sourdough starter
3/4 tsp salt
1 cup flour

Preheat oven to 450F with muffin pan in the oven.
Warm the milk so that it feels just slightly warm to the touch (either in the microwave or the stovetop).
In a medium bowl combine the warmed milk, eggs, starter, and salt.
Mix in the flour, being careful not to over mix. Some lumps are ok.
Carefully remove the muffin pan from the oven and spray with cooking spray or brush with melted butter.
Quickly pour the batter into the cups, filling them all the way to the top and leaving spaces in between each one. 
Bake for 15 minutes.
Reduce oven temperature to 375 and bake an additional 15-20 minutes, until golden brown and "popped".
Remove and serve immediately.
